History

Founded in 1885, the house has focused on shochu from the start. Its sweet potatoes, barley and koji rice come from its own organic farm and local growers, and it brews by hand in earthenware pots and wooden vats with its own cultured yeast and subterranean water from Mount Osuzu. The Osuzuyama Distillery opened in 1998 in the hills of Kijo. Returning spent mash to the fields as fertiliser is part of its circular farming approach.
