Kubota Shuzo (久保田酒造合資会社)
Kubota Shuzo is a sake brewery in Maruoka, Sakai, Fukui, that has been making sake for over 270 years. It brews with groundwater from its own grounds and rice it grows itself, and also makes liqueurs.
What kind of brewery is Kubota Shuzo?
The brewery began in Horeki 3 (1753), when the lord of the Echizen Maruoka domain ordered the Kubota family to revive a legendary sake of the Muromachi period that had been lost. Since then the family has brewed in Maruoka as a household trade. Its approach rests on three things: groundwater, rice grown in paddies with water similar to that groundwater, and steady, high-quality koji making.
