Koizumi Shuzo (小泉酒造合資会社)
Koizumi Shuzo is a sake brewery in Futtsu, Chiba, at the foot of Mount Kano, making the Tokai and Tokaizakari sake. It also runs a tasting and sales facility, Sommelier House Sakasho no Yakata, next to the brewery. It was founded in 1793.
What kind of brewery is Koizumi Shuzo?
In 1793 Koizumi Heizo, who had been granted the right to bear a surname and sword, founded the brewery at the foot of Mount Kano. In the early Meiji era Genzo took over the family and expanded the business, and the earthen-walled brewery building from that time still stands. In the early Showa era the owner Issuke built a refrigerator inside the brewery for strict temperature control and devoted himself to ginjo brewing. Today the owner serves as toji, brewing with rice grown by the brewery and brewing water from the Kano mountains. The Sommelier House opened in 1996.
