History
The brewery was founded in 1659 when the timber merchant Jirotayu Munenori Kano built a brewery on his estate in Mikage. In the Edo period Nada sake was shipped to Edo, where this brewery's sake was widely enjoyed. It registered the Kikumasamune trademark in 1886 and adopted a microscope and other scientific controls in the Meiji era. Today it continues kimoto brewing, using Nada's Miyamizu water and the skills of Tanba toji to make dry sake.
