Kankyo Shuzo (甘強酒造株式会社)
Kankyo Shuzo is a brewery in Kanie, Aichi, that centers on hon-mirin and also makes sake, amazake and fermented seasonings. It was founded in 1862.
What kind of brewery is Kankyo Shuzo?
In 1862 the first-generation Yamada Heihachi began making mirin, drawing on glutinous rice from the Nobi Plain and the boat transport of local creeks. In 1935 the business was reorganized from a family shop into a company and the name Kankyo Mirin was adopted. Sake brewing began in 1954, and mirin and sake are still made from local and domestic rice. Four buildings on the grounds, dating from the Meiji to Showa eras, are registered tangible cultural properties.
