Where to buy

What kind of brewery is it?

The brewery was started in Otaru by the first head of the family, who came from Ogaki in Gifu Prefecture. During the wartime period in 1944, production was consolidated into another Otaru company, and Tanaka Shuzo continued only as a sales business. In the 1950s the third-generation head revived the company's own production. Tanaka Shuzo Co., Ltd. was established on July 4, 1956. In 1995 the production facility was named Kikkogura and remodeled into a brewery open to visitors. In 2026 the fifth-generation head became president.

What makes it distinct

Water
The Kikkogura brewery draws groundwater from about 70 m underground for brewing. It is snowmelt from Mt. Tengu that has become groundwater.
Ingredients
The main rice, sake-brewing rice, is 100% from Hokkaido. Mainly Hokkaido sake-brewing rice is used, chosen to suit each sake's character.
Master brewer
The toji and staff take part in rice farming, from planting to harvest, at a contract farm.
Style
The brewery brews all year round, shiki-jozo style, so fresh unpasteurized sake is available even in summer.
