What kind of brewery is it?
The brewery was founded in 1805 and has brewed sake since then; the company itself was established in 1940. It favors Aichi rice and has studied the sake rice Wakamizu, developed at a local agricultural station in Anjo, for over 20 years. Since 2004 it has had growers in Anjo cultivate it, and staff join in planting and harvesting. All rice is bought as brown rice and polished in-house.
What makes it distinct
- Ingredients
- Most sake rice is Yumesansui from Okumikawa and Wakamizu from Anjo; Yamadanishiki is also used. Rice is bought as brown rice and all of it is polished in-house.
