Ito Goshi Kaisha was founded in 1788 and, besides sake, ran miso and soy sauce production, a pharmacy and a bank. Shikishima won favor in Edo, but the company closed in 2000 amid falling sake demand and trouble at its wholesale arm. In 2020 the ninth-generation head, Yu Ito, made the tank-scale Shikishima 0 Hōme with help from Fukumochi Shuzojo in Mie. In March 2021 the brewing license was reacquired, the old main brewery and new plant were bought back, and in December 2021 the company returned to Kamezaki as Ito Inc.
