Ishizuchi Shuzo was founded in 1920 by Tsunejiro Ochi. The Ochi family had been village heads in neighbouring Niihama, later moved to Hiromi in Saijo, and turned from shipping wholesale to brewing. When the toji retired in 1999, the brewery dropped the toji system and moved to a family-run structure with shared roles. Its stated aim is sake that comes alive with food.
