What kind of brewery is it?
Imazato Shuzo was founded in 1772 in the late Edo period and has brewed sake in Hasami since then. The buildings were enlarged over time and now form a group of more than ten structures. Six of them were registered as national Tangible Cultural Properties in 2006. The brewery continues to make sake while keeping the techniques handed down over more than 250 years.
What makes it distinct
- Water
- The basin setting gives a large temperature difference between day and night and a clean water supply.
- Ingredients
- The area is also a place where good quality rice is grown.
- Also
- Because the condition of the sake rice changes with the year's weather, the brewery adjusts each step from rice washing to the mash closely.
