What kind of brewery is it?
Ide Shoyu-ten began as a soy sauce brewery in the mid Edo period. In the late Edo period, the 16th head of the family started making sake alongside soy sauce, drawn to the cool climate at 850 meters and the spring water from Mount Fuji. The name Kaiun came from the timing of the marriage of Princess Kazunomiya, and the brand was later formalized as Kai no Kaiun in 1985. Brewery tours began in 2010, the sparkling sake Hokuroku Sparkling started in 2019, and the Fuji Hokuroku Distillery began whisky production in 2020.
