What kind of brewery is it?
The brewery was founded in the Kaei 3 era in Okumino and has made sake since the Edo period, now in its 13th generation. The main house and the two brewery buildings are original to the founding and still in use. With no large equipment and well-worn old tools, everything is made by hand and each batch is small. Yeast long resident in the brewery and the skill of the toji and brewers shape its character. A newer brand, PEACE, named after Heiwanishiki, has been added.
