What kind of brewery is it?
The brewery began in 1902 when Kakuji and Shigesaku Kanda, father and son, took over a shrine-owned rice field and brewed with the rock spring water and rice from it. The name is said to come from the scent of plum blossoms drifting around the brewery. In 1992 the company name became Hananoka Shuzo Co., Ltd., and in 2011 the sixth-generation head, Kiyotaka Kanda, succeeded the fifth. In 2015 a junmai sake made wholly from local rice was released, in 2021 ubusuna was adopted as the brewing philosophy, and in 2022 the ubusuna sakes went on sale.
