Its brewing water is subterranean flow from the Nahari River, sourced in the Yanase cedar country, and is very soft. It prizes special-A Yamada Nishiki from Tojo in Hyogo while also trying rice from Kochi and Ehime. The name Bijofu carries the ideas of beautiful, strong and kind. The toji has 34 years of brewing experience.
