What kind of brewery is it?

Hakusen Shuzo was founded in the late Edo period and is based in Kawabe, Gifu Prefecture. It has kept traditional, handmade methods since the Edo period and has made its own shochu as the base for its mirin. Today it produces sake, hon-mirin, shochu and liqueurs. Brewing and mirin production take place in Kawabe, while bottling and shipping are done at a factory in Yaotsu. Koji is made by hand without machines, and sake is pressed in the traditional fune press.
