What kind of brewery is it?
The brewery was founded in 1840 and incorporated as a company in 1923. The eighth-generation kuramoto is Yohei Sato. Its home district of Kannari-Arikabe was once called Hagi no Mura, and the main brand Haginotsuru combines hagi with the auspicious crane. Nichirinden began in 2002 (Heisei 14) as an all-junmai brand sold only through retailers.
What makes it distinct
- Water
- Brewing water is soft spring water from the company's own mountain land, piped directly to the brewery.
- Ingredients
- Rice includes Kura no Hana, Miyama Nishiki, Omachi and Yamada Nishiki.
- Style
- Sokujo and yamahai starters are used depending on the desired style.
- Also
- Each fermentation tank takes only 600 to 1000 kg of rice, allowing careful temperature control.
