Fukubijin Shuzo (福美人酒造)

Fukubijin Shuzo is a sake brewery in Saijo, Higashihiroshima, Hiroshima, brewing sake since 1917 under the Fukubijin brand.

What kind of brewery is Fukubijin Shuzo?

The brewery has made sake in Saijo since 1917 (Taisho 6). Because its skills drew toji from across the country to learn, it came to be called the Saijo Sake Brewing School. In 1968 a 28-year-old Okada was appointed toji, taught by his predecessor. Brewing is now centered on the Daikokugura building, while the Ebisugura building keeps its red-brick chimney. The current toji is named Ishikawa.

Style
Sake is made by hand with traditional methods: small batches, lid-koji, kimoto and wooden-vat brewing.
Master brewer
The current toji is Ishikawa.
