Etajima Meijo (江田島銘醸株式会社)

Etajima Meijo is a sake brewery in Etajima, Hiroshima Prefecture, producing brands such as Doki no Sakura, Furutaka and Etajima, along with a rice shochu.

What kind of brewery is Etajima Meijo?

The brewery began as a supplier of sake to the Navy after the naval academy was established on Etajima. The first-generation founder, Yaozo Sumioka, had made his fortune as a shrine carpenter before entering sake brewing. The second generation also ran a food factory but died suddenly, and the third generation succeeded as an adopted heir. From 1983 the fourth generation served as both president and toji. Today the fifth generation, Ryu Sumioka, brews as toji.

Water
Brewing water is soft groundwater springing from Mt. Furutaka.
Style
Koji is made by the traditional koji-buta method rather than by machine.
