What kind of brewery is it?
The brewery traces back to a merchant family from Omi, who began brewing sake in present-day Fujinomiya during the Bunsei era. Several brewhouses were set up around Mt. Fuji, and in 1929 a second son branched off and established a partnership company at the present Yokosuka site. In 1986 the second-generation head began brewing Aoi Tenka, and the brewery has brewed on its own since 1999. In 2021 it was reorganized as a stock company.
What makes it distinct
- Water
- Brewing and rice washing use groundwater pumped from 120 meters underground inside the brewery.
- Ingredients
- Steamed rice is made in a traditional Japanese kettle rather than mechanically.
- Also
- Pressing is done in a traditional tank (funa-shibori) rather than with an automatic press.
Visiting
