Ayakiku Shuzo (綾菊酒造株式会社)
Ayakiku Shuzo is a brewery in Ayagawa, Kagawa Prefecture, founded in 1790. It makes sake from locally grown Oseto rice and groundwater from the Asan mountain range.
What kind of brewery is Ayakiku Shuzo?
Ayakiku was founded in 1790 and has since brewed with local rice and water. The brewery building is registered as a tangible cultural property of Kagawa Prefecture and keeps its old appearance. Oseto rice was widely grown in the Yamada area until around 2004, but cultivation stopped as demand fell. From fiscal 2017 the brewery worked with a local farming company to revive Oseto cultivation, and from 2018 it has used paddy sensors and outdoor monitoring to record growing data. The honorary toji spent ten years studying how to brew with Oseto rice.
