What kind of brewery is it?

The brewery was founded in 1875 in Yamaoyodo, Meiwa, by the first-generation head, Nishiyama Rihejii. It has kept its traditions for over 130 years, and the current head is the sixth generation. The present brewery building dates from 1923 and has few windows to keep sunlight out. More recently it has worked with Meiwa town, Kogakkan University and local farmers on Shinto no Inori, a sake made with locally grown rice.

What makes it distinct

Water
Brewed with subsoil water of the Kushida River and a long, low-temperature fermentation.
Ingredients
Uses Yamadanishiki and Mie-grown Kaminoho rice. Grows its own Kitanishiki sake rice in a field beside the brewery.
Also
The brewing steps are done by hand by the toji and brewers.
