What kind of brewery is it?
The brewery was founded in 1868. The managing director first had no intention of taking over the family business and worked for a US securities firm in New York's financial district. He later returned to Japan, and at 32 began learning brewing under his teacher Kawamura Denbei. He carries on that style as a successor of the Shida toji tradition, and outside the brewing season he also works in the rice fields of a local farmer.
What makes it distinct
- Water
- The brewery sits where Southern Alps subterranean water wells up, and brews with the same water that grows the rice.
- Style
- At rice washing, the amount of water the rice absorbs (limited water absorption) is set first.
- Master brewer
- Brewing is carried out by a successor of the Shida toji tradition.
