What kind of distillery is it?

History

Wakamatsu Yauemon founded the business in 1719 as Minato no Sakaya. It first made rice shochu known as Ichiki shochu in Ichiki, a post town on the daimyo procession route. In 1880 it received a licence plate that the company describes as the oldest surviving in Japan, and sweet potato shochu began in 1909. Wartime rice shortages pushed it toward sweet potato, and today it uses Kagoshima-grown Kogane Sengan and water filtered through the Shirasu plateau.
