History
The founder, Koyamaya Matabei, learned brewing in Nada, Itami and Fushimi, moved to the Kanto region and found good spring water in what is now Saitama City, where he built his brewery. Since its founding in 1808 the brewery says it has kept making sake for more than 200 years. In 1995 a second brewery opened in Fushimi, Kyoto, where Matabei had trained, using Fushimi's soft spring water. The Fushimi site is the Kansai base and is described as about 20 percent of total output. The company itself was incorporated in 1963, counted separately from the founding.
