Collection: Niigata sake
Niigata sake is generally characterized as being "light and dry." Niigata's water is very soft with little mineral content, and fermentation proceeds slowly at low temperatures, resulting in a refreshing flavor.
After the war, when sweet sake became mainstream, Niigata's light, dry sake sparked a local sake boom. Niigata produces a wide variety of light, clean-tasting sake using "Gohyakumangoku" rice, named after the rice production in Niigata Prefecture, which exceeded 5 million koku.
